Separa principalmente s\u00f3lidos en suspensi\u00f3n, bacterias, macroorganismos y micelas. Sin embargo, las mol\u00e9culas solubles no son retenidas por las membranas de MF. En la industria l\u00e1ctea, la microfiltraci\u00f3n se aplica a la eliminaci\u00f3n de bacterias y la separaci\u00f3n de micelas de case\u00edna y prote\u00ednas solubles.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h3 class=\"wp-block-heading\">Ultrafiltraci\u00f3n (UF)<\/h3>\n\n\n\n<p>Adem\u00e1s de lo que pueden lograr las membranas de MF, las membranas de UF pueden eliminar macromol\u00e9culas como l\u00edpidos y prote\u00ednas. Las membranas de UF suelen clasificarse con un tama\u00f1o de poro de entre 1.000 y 500.000 Da. En la industria l\u00e1ctea, la ultrafiltraci\u00f3n se aplica a la estandarizaci\u00f3n y concentraci\u00f3n de prote\u00ednas y s\u00f3lidos de la leche, y al procesamiento de leche entera, reduciendo el contenido de grasa de la leche desnatada.<\/p>\n<\/div>\n<\/div>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-vertically-aligned-center is-layout-flow wp-block-column-is-layout-flow\">\n<h3 class=\"wp-block-heading\">Nanofiltraci\u00f3n (NF)<\/h3>\n\n\n\n<p>La nanofiltraci\u00f3n, tambi\u00e9n conocida como \u00f3smosis inversa suelta, se encuentra entre la \u00f3smosis inversa y la ultrafiltraci\u00f3n. Separa compuestos de bajo peso molecular (por encima de 200 y 1000 Da) de mol\u00e9culas m\u00e1s grandes. En la Industria L\u00e1ctea, la Nanofiltraci\u00f3n se aplica a la desmineralizaci\u00f3n parcial del suero y a la producci\u00f3n de leche sin lactosa.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-vertically-aligned-center is-layout-flow wp-block-column-is-layout-flow\">\n<h3 class=\"wp-block-heading\">\u00d3smosis Inversa (RO)<\/h3>\n\n\n\n<p>La \u00f3smosis inversa es un proceso de deshidrataci\u00f3n que funciona a alta presi\u00f3n y se basa en una membrana muy densa. Las membranas de \u00f3smosis inversa separan solutos con un peso molecular de aprox. 200 Da y m\u00e1s y exhiben \u2265 80 % de rechazo por retenci\u00f3n de NaCl. Por lo tanto, tambi\u00e9n pueden eliminar sales monovalentes, utiliz\u00e1ndose cuando se requiere desalinizaci\u00f3n o retenci\u00f3n completa de sales. Por las cualidades funcionales y nutricionales de sus prote\u00ednas, tiene diversas aplicaciones en tecnolog\u00eda de alimentos como materia prima.<\/p>\n\n\n\n<p>En la industria l\u00e1ctea, la tecnolog\u00eda de membranas, particularmente la ultrafiltraci\u00f3n (UF), se ha utilizado para fabricar concentrados de prote\u00edna de suero (WPC- Whey Protein Concentration) porque permite la concentraci\u00f3n selectiva de prote\u00ednas en proporci\u00f3n a otros componentes.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h3 class=\"wp-block-heading\">Preconcentraci\u00f3n de leche para elaboraci\u00f3n de queso<\/h3>\n\n\n\n<p>La capacidad de utilizar la ultrafiltraci\u00f3n para preconcentrar la leche antes de la elaboraci\u00f3n del queso se ha aprovechado ampliamente para una gran variedad de quesos. Mediante este procedimiento, la leche se concentra al nivel deseado manteniendo constante la proporci\u00f3n de prote\u00ednas del suero a case\u00edna.<\/p>\n<\/div>\n<\/div>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h3 class=\"wp-block-heading\">Leche estandarizada en prote\u00ednas<\/h3>\n\n\n\n<p>La cantidad de prote\u00edna de la leche recolectada por las plantas lecheras var\u00eda seg\u00fan la estaci\u00f3n debido a una variedad de factores que incluyen la etapa de lactancia, el clima, la alimentaci\u00f3n y la raza de las vacas lactantes. Este problema se elimina mediante un modesto aumento en el contenido de prote\u00ednas mediante ultrafiltraci\u00f3n (UF). El volumen de leche o suero sin lactosa se puede reducir a\u00fan m\u00e1s permitiendo el flujo de iones monovalentes y rechazando parcialmente los iones multivalentes, para lograr ahorros en los costos de transporte.<\/p>\n<\/div>\n<\/div>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-9d6595d7 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h3 class=\"wp-block-heading\">Eliminaci\u00f3n de bacterias<\/h3>\n\n\n\n<p>Como la mayor\u00eda de los alimentos, la leche y sus derivados proporcionan un entorno favorable para los microorganismos que los deterioran. En consecuencia, se deben seleccionar los par\u00e1metros de pretratamiento y temperatura-tiempo para controlar el crecimiento microbiano. Esto se aplica a la producci\u00f3n de leche para queso, a la preparaci\u00f3n de leche en polvo y a la producci\u00f3n de leche de fecha de caducidad prolongada (ESL). El tama\u00f1o de los poros de la membrana se selecciona para retener bacterias y esporas, permitiendo el paso de todos los dem\u00e1s componentes descremados de la leche.<\/p>\n<\/div>\n\n\n\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h3 class=\"wp-block-heading\">Concentrados y componentes aislados de leche<\/h3>\n\n\n\n<p>La tecnolog\u00eda de filtraci\u00f3n por membrana se utiliza para obtener concentrados y componentes aislados de prote\u00ednas l\u00e1cteas a partir de leche desnatada. La leche entera se divide en leche desnatada y nata, y luego la leche desnatada se fracciona mediante membranas de ultrafiltraci\u00f3n para concentrar a\u00fan m\u00e1s las prote\u00ednas de la
